Legend has it that Lapsang Souchong tea was first produced purely by chance, as tea makers were eager to speed up the drying process of the tea leaves in anticipation of invading armies. To do this, they dried the tea leaves over smoking fires made from pine, which just so happened to infuse the leaves with a beautifully sweet and smoky flavour.
